Foodie Friday: Bean and Rice Burritos

Normally when I cook burritos for myself at home I start with dried pinto beans and go from there, but that requires soaking, boiling, and simmering time that would leave me feeling like a kitchen hog if I were staying in a hostel.

Also, when cooking at home I can never stop at rice and beans so I always add some lettuce, tomato, and cheese.

Instead, of being a kitchen hog, I will borrow a page out of my mom’s book and do it the easy way.

Makes enough for four burritos (or more if they are smaller wussy burritos!).

Ingredients

1 can of refried beans

1-2 cup of instant rice

2 tbs taco seasoning

tortillas

Optional

Lettuce

Tomatoes

Cheese

Steps:

1. You can microwave rice according to the directions (not more than 9 minutes).

2. Dump the refried beans into a pan. Heat them up with a bit of water and the taco seasoning mix.

3. When the rice is done in the microwave, dump that in the pan too. Mix it together. When everything is warm and smells delicious (2 min or so), scoop some of the rice and bean mix onto a tortilla.

If you want to titillate your tastebuds you can add the optional ingredients to your burrito.  Also, everything is usually better with hot sauce! Leftovers are still good the next day!
