While I was living in Italy I made this meal all the time for dinner. I had never had mozzarella di buffala (mozzarella made with buffalo milk) until I found it at the little store next door to my apartment in Italy. Once I tried it I was hooked!
This meal is simple, cheap, and delicious! It is a great lunch on its own or a tasty dinner with an actual caprese salad on the side.
Ingredients
1 smallish baguette
1 tomato
4-5 basil leaves
2-3 slices of mozzarella di buffala
1-2 tbs of olive oil
salt/pepper to taste
Steps:
1. Slice the bread open.
2. Try to spread the oil across the bread as best you can.
3. Slice the tomato and arrange across the bread.
4. Arrange the mozzarella on top of the tomato.
5. Add S&P to taste.
Note: If I were trying to make this into a more substantial meal I would add a few slices of salami or ham.
